FROM PORTLAND WITH LOVE

This stainless steel, conical filter for Chemex and Hario pour over equipment made it into our cupping lab over the holidays. Coava Coffee roasters in Portland Oregon developed the filter as a resusable eco-friendly alternative to paper filters. (They also make a Disk filter for aeropress brewing, but we’ll get to that in another post). We also love the french press like quality they bring to a cup of coffee. We experienced more body and a longer finish with the Kone than the brighter cup we were accustomed to using paper filters in the Hario V60 . This may also be attributed to the coarser grind we had to adjust for due to the perforations in the metal filter. When used with the Chemex we found that it really helped bring the coffee to life. We experimented with a few different origins including a lighter roast Guatemala, a medium roast Sumatra and a dark roast Peru. The Sumatra turned out to be everyone’s favourite in the Chemex. But still we all really enjoyed using the Kone and recommend that you try it too with your favourite coffee and see for yourself the difference it makes.
